Cartoon Network Hotel Sous Chef

This full-time, front line supervisory position provides oversight in the back of house kitchen area for the Cartoon Kitchen restaurant, located within the Cartoon Network Hotel. The role responsibilities include overseeing line cooks and kitchen team members to provide an exceptional dining experience to guests, making operational decisions, and purchasing and managing food and supply inventory. This position reports to the Food & Beverage Manager/Executive Chef.

Roles & Responsibilities:

Weigh, measure, and mix ingredients using various kitchen utensils and equipment; season and cook food according to recipes or personal judgment
Ensures kitchens and related areas are set up and cleaned correctly to start and end shifts
Inspect supplies, equipment, and work area to ensure conformity to health standards
Train and instruct line cooks and kitchen team members in proper food preparation procedures
Conduct daily production meetings with line cooks and kitchen team members, and assigns them to stations; assist line cooks to organize their daily preparation schedule
Monitors proper food handling, preparation and cooking methods to assure menu selections are prepared in a timely manner and meet quality standards
Taste tests food for proper production quality
Communicates recipe and menu changes to line cooks and kitchen team members, and follows through to confirm changes have been understood and incorporated into operations
Work closely line cooks and kitchen team members to maintain and improve standards of food served to guests
Manages food cost through control of meal production, food waste, utilization of leftovers, and portion control
Support the Food & Beverage Manager/Executive Chef with developing recipes and menus
Oversee special catering events, which could include offering culinary instruction and /or demonstrates culinary techniques
Coordinates purchasing with the Food & Beverage Manager/Executive Chef, and assist with inventory, inspect supplies, and ordering duties as assigned
Follows Cartoon Network Hotel HACCP plan and food safety policies and procedures
Utilizes computer programs to complete daily reports and communications
Contribute to maintaining a safe working environment for all employees, including adhering to company policies as well as local, state, and federal guidelines
Other duties as assigned
Basic/Required Qualifications:

Must be 18 years of age or older
Must have reliable transportation to and from work
Must be able to read, write, speak, hear, and understand English
Associate’s degree from a culinary or related college or university, four (4) years of culinary experience, or equivalent combination of education and experience
Minimum of one (1) year of supervisory and/or management experience
Working Conditions:

Physical requirements include the ability to sit, walk, speak, hear, type, lift up to 50 lbs., unload or rearrange stock boxes, and use common kitchen equipment such as knives, grills, ovens, and fryers
Must be able to work indoors in a kitchen setting, as well as outdoors in a variety of weather conditions when the outdoor snack stand is operational
Must be able to work flexible hours including evenings, weekends, and holidays. During times of severe weather or other emergency, team member may be asked to work creative scheduling to ensure that immediate and necessary functions are available to guests
Additional/Preferred Qualifications:

Experience in food and labor cost control, demonstration cooking, and menu development
P&L accountability and/or contract manage service experience
Excellent communication skills in order to present information, converse with other team members, and address guests and vendors
Ability to work in a team environment with a self-motivated, solution-oriented perspective
Critical thinking and analytical skills to process data and make next-step recommendations
Customer service mindset in all aspects of job duties
Ability to attend to detail, prioritize projects, and multi-task as necessary
Previous experience with Point of Sale (POS) systems
